8 eggs
1/2 cup mushrooms (sliced)
1 cup onion (thinly sliced)
1 cup bean sprouts
1/2 cup green onion (chopped)
2 tbs soy sauce

DIRECTIONS
Slice vegetables. In a large bowl, beat 8 eggs. Add all vegetables ,
soy sauce and a pinch of salt and pepper stir to combine. Heat oil in a skillet on medium heat and add about half a cup of the egg mixture to the pan (I use a ladle) Cook each side until golden brown, flipping once or twice.
