Super easy egg foo yung

8 eggs

1/2 cup mushrooms (sliced)

1 cup onion (thinly sliced)

1 cup bean sprouts

1/2 cup green onion (chopped)

2 tbs  soy sauce

Oil for frying (vegetable or sesame)

Salt

Pepper

DIRECTIONS

Slice vegetables. In a large bowl, beat 8 eggs. Add all vegetables ,

soy sauce and a pinch of salt and pepper stir to combine. Heat oil in a skillet on medium heat and add about half a cup of the egg mixture to the pan (I use a ladle) Cook each side until golden brown, flipping once or twice. Repeat the process until batch is complete. This will make about 8 servings depends on how big you make them. And there you have it a simple recipe for egg foo yung
